AromaA complex bouquet with blackberry, plum and licorice fruit aromas combined with coffee and dark chocolate oak flavors. Cigar box and cinnamon characters are present from ageing in bottle.
PalateA rich , intense wine , however quite a ‘gentle giant’ as it is round and mellow on the finish . Fruit flavours of spicy berry, ripe plum and cassis are complimented by integrated dark chocolate and brown spice oak flavors. The finish is long and plush with a fine grain tannin backbone providing structure for this wine to drink now or cellar for many, many years to come.
Growing ConditionsWinter in 2011 was fairy wet and the drought had broken. This provided good subsoil moisture for the vines to grow consistently without too much irrigation being required. Early spring was when the vines went through budburst. The regions this wine was made from experienced a relatively warm summer leading up to harvest with some small rainfalls which helped healthy canopies on the vines. A mild, warm February provided the necessary heat to ripen the fruit to ensure good tannins and the development of varietal fruit flavours. The overall quality of the fruit was high and displayed ripe tannins, great natural acidity and depth of flavour.
Vinification/MaturationSmall parcels of Cabernet and Shiraz were expertly handled and kept separate using small open fermentation vessels. The fruit was cold soaked for 48-72 hours prior to starting a cool and controlled fermentation. As the fermentation continued, the must was headed down to submerge the cap, allowing gentle extraction of tannins to permeate out of the skins. To further soften the natural tannins and integrate the oak, at just under 1 Baume, the must was pressed off the skins to finish fermentation in new and second year old French oak. The wine was matured as individual parcels for 18 months prior to being carefully blended, egg white fined and filtered ready for bottling.
