PalateYouthful brightness provides layers of dark berry fruit and a white pepper spice that lingers. Soft velvet tannins wrap around an elegant oak structure resulting in a rich wine with a long flavoursome finish.
Vinification/MaturationFruit was harvested in the cool of the morning to maximise fruit freshness. Upon reception at the winery, the fruit was carefully destemmed into a combination of open top & rotary fermenters where they underwent a 4-day cold maceration prior to fermentation, followed by a warm ferment for a total time on skins of 14 days. All parcels were pressed off at dryness, then matured in large format barrels for 12 months prior to blending for bottling. The new oak percentage was quite low at just 12%, enough to give some structure and to play a support role to the aromatics.

The Heathcote wine region in rural Victoria is known for its red Cambrian soil, which together with the warm climate combine to produce Shiraz fruit of wonderful concentration and supple, savoury tannins. The 2017 Under & Over Heathcote Shiraz presents layers of dark berry fruit and a white pepper spice that lingers. Soft velvet tannins wrap around an elegant oak structure resulting in a rich wine with a long flavoursome finish.
