|Growing Conditions||A warm & dry growing season resulted in moderate crops of with minimal disease pressure. The harvest period continued to be dry with nil rain events, this was ideal avoiding any delays to the ripening process. Fruit was harvested at the ideal ripeness & displays fantastic, pristine fruit flavours.|
|Vinification/Maturation||All fruit was machine harvested at night to retain freshness and flavour. Fruit is chilled and pressed immediately. Juice is cold settled for 3 days until clear before cold fermentation in stainless steel tanks to conserve fruit flavour. A component of wine is barrel fermented for texture and mouth feel.|
Wine is matured in stainless steel tanks with light yeast lees to also add texture to the wine. The wine is then blended, stabilised followed by gentle fining & filtration before bottling.
