|Vinification/Maturation||All fruit was machine harvested at night to retain freshness and flavour. Fruit is chilled and pressed immediately. Juice is cold settled for 3 days until clear before cold fermentation in stainless steel tanks to conserve fruit flavour. A component of wine is barrel fermented for texture and mouth feel.|
Wine is matured in stainless steel tanks with light yeast lees to also add texture to the wine. The wine is then blended, stabilised followed by gentle fining & filtration before bottling.
