PalateAn elegant Pinot that is soft in the mouth with a solid complexity of flavour. The palate has a silky smooth tannin profile with ample red berry fruit and gamey forest floor notes. Some fresh biscuit French oak lingering in the background to top it all off.
Growing ConditionsVintage 2015 was a fantastically dry and mild growing season in the Yarra Valley. This resulted in fresh canopies, moderate berry size and minimal vine stress allowing the fruit to reach optimal flavour ripeness with great retention of freshness & acidity.
Vinification/MaturationSelect parcels of grapes were hand harvested from low yielding vineyards throughout the Yarra Valley. The fruit was then gently destemmed into small stainless steel vats, with up to 33% whole clusters included. A period of cold maceration took place prior the beginning of any fermentation, to extract colour and flavour without the influence of alcohol. Tanks were then allowed to warm; select yeast was added and gently plunged to for 7 days to obtain a fragrant & silky textured wine. A period of warm post fermentation maceration was allowed to occur in order to develop palate richness, and further integrate and soften the tannins. Following primary fermentation the parcels were gently pressed then racked to barrel of which 20% were new French oak barriques and hogsheads. The wine went through natural malolactic fermentation in barrel and held on its lees for a period of 9 months undisturbed prior to final blending. Post blending the wine was lightly fined with egg whites prior to a light filtration before bottling.
