PalateAn elegant juicy style with layers of peppery and musk stick red fruits coming through the middle palate and lasting right through to the finish. The palate has the hallmark of typical McLaren Vale savoury tannins of Grenache which neatly ties everything together with great sustaining tannin and balance in the whole mouth.
Growing ConditionsAn atypical, testing growing season with above average rainfall resulting in high disease pressure. Harvest started on average 2-3 weeks later than average due to the wetter season. Well managed vineyards achieved ripe fruit with fresh aromatics and good flavour concentration. The fruit from this 80 year old vine Willunga Grenache parcel was handpicked in cool conditions to retain the delicate aromatics of the variety and preserve the structure of the old vines
Vinification/MaturationOnce the fruit arrived at the winery the fruit was de-stemmed and chilled to 10øC, with a 10% whole bunch inclusion to add to the colour and tannin texture and was cold soaked of 6 days before primary fermentation. After spending over more than 21 days on skins, with the additional maceration with plunging, the wine was gently pressed then racked into old French oak barrels. It was matured for 14 months then carefully blended and lightly fined for bottling.
