|Growing Conditions||An early and dry vintage of low to moderate crops, resulting excellent intensity and depth of flavour across varietals.|
|Vinification/Maturation||Once at the winery the Semillon was destemmed and pressed off skins into stainless steel tanks. Here the juice was cold settled bright before being racked off, warmed and inoculated for ferment. The juice was fermented cold with a specific yeast strain chosen to promote the bright aromatic profile of the wine. Halfway through ferment the wine was chilled to 2 deg C to naturally stop the fermentation at the desired final sugar level. Following fermentation the wine was settled, and gently fined before being filtered to bottle.|

Mount Pleasant B-Side LS8 Semillon is made by taking a parcel of quality Semillon grapes and stopping the fermentation process earlier so that the wine retains more natural sugars giving a sweeter (what winemakers call ‘off-dry’) flavour profile, with powerful citrus notes and a rich, luscious palate.
