PalateA textural and complex medium bodied palate of very good depth & length, characterized by intense stone fruits, citrus and amazing texture.
Growing ConditionsAn early and dry vintage of low to moderate crops, resulting excellent intensity and depth of flavour across varietals.
Vinification/MaturationOnce at the winery the Semillon and Chardonnay were de-stemmed and crushed to a stainless steel tank where the must sat for two days. The must was then allowed to warm naturally, and ferment happened spontaneously. The ferment was brisk, lasting seven days, where the resulting wine was topped and left on skins. Seven months later the wine was pressed off the skins in September, where it was bottled with no finings or stabilization.

Semillon plus X, Y and Z; I'm not sure X, Y and Z add much to the power of the semillon, it very much to the fore of the long, driving palate, grass, citrus and a bucket of mineral.
