ColourDeep brown/amber with an khaki tinge.
AromaLifted intense aged-oak nutty flavours, with walnut, pistachio and vanilla oak characters showing the refinement of a true barrel aged tawny.
PalateExtremely rich and full with a viscous palate of raisins, dark chocolate and Christmas pudding. The palate is round, luscious and long but has fine tannins which balance out the sweetness and help make the finish of the wine dry and savoury.

Vinification/MaturationThe grapes were harvested at approximately 15 -16 Baume. The fruit was then crushed and destemmed and pumped into open fermenters and fermented on skins to extract colour and tannins. Partial fortification using neutral grape spirit gave greater integration and complexity to the final wine. The wine was then drained and pressed and fortified up to 18.5% alcohol. The wine was then allowed to settle out and the clears racked off the top of the solids.The wine was then cold stabilised and heat stabilised and filtered prior to going into barrel. When another tawny barrel is emptied to make up a blend the next wine is then pumped into that barrel to age for up to 30 years. During this time in barrel, the wine will mature by the water evaporating out of the wine over time and as a result concentrating the wine. The barrels are checked yearly during the maturing time to ensure they are kept fresh and may need some preservative added to keep them fresh and lively. Once they have aged in barrel and are selected to go into a blend, the wine is pumped out and blended with some other barrels to make a consistent style of wine year in, year out.
