|Colour||Light gold with amber hues.|
|Aroma||Intense dried apricot, marmalade, crŠme brulee and peach notes also evident. Almond and biscuity characters show through from the high quality French Oak.|
|Palate||Intense flavours of lemon marmalade, dried apricot and mango are found, with nuances of peach, red apple and exotic lantana fruit flavours. Excellent complexity and length derived from the French Oak is highlighted with an excellent balance of sugar and acidity providing weight and length.|
|Growing Conditions||Intake of Riverina fruit was complete extremely early in 2010, possibly one of the earliest vintages on record which saw the reduction of phenolic development in the vineyard and the retention of fruit character. The botrytis set in during April and was heavily monitored before picking.|
|Vinification/Maturation||The Semillon grapes were left on the vine for approximately two months longer than normal to allow for development of botrytis. Hand harvesting took place and the grapes were cold soaked for 24 hours prior to being pressed off into tank for a short settling period. The juice was transferred to new and used French Troncais and Allier Oak to ferment through to the balanced sugar and alcohol level desired for this style.|
