PalateA fresh, detailed wine, with a soft, creamy entry of vibrant ripe citrus fruits. The finish is refreshing and long with great mouthwatering acidity & a varietal saline drive.
Growing ConditionsAfter one of the wettest winters on record the growing season followed up with a cool spring & a warm summer. This resulted in healthy vines with robust canopies and moderate yields. The harvest period was about 2 weeks behind average. This slightly later harvest allowed the fruit to mature to full flavour ripeness in cooler conditions and has resulted in fantastic wines with ripe flavours, balanced acid and lower alcohols.
Vinification/MaturationPicked in the cool of the morning to retain maximum varietal integrity. Processed as two parcels utilising different processing techniques to allow greater complexity in the final blend. One parcel was immediately pressed off skins, settled to brilliant clarity, fermented in cool conditions & removed from solids immediately post ferment to achieve a pure, Riesling-like, expression of Vermentino. Parcel two was left on skins for 6 hours prior to starting the press. Juice was settled to remove heavy solids, but maintaining high turbidity. Fermentation temperature was warm and the wine was kept on lees post ferment with regular stirring to build fullness. This was done to achieve a textural, modern style of Vermentino. In late winter the parcels were blended then gently fined and filtered prior to bottling.
