Growing ConditionsSolid above average rainfall in winter helped to produce good soil moisture and ample base nutrients for the vines to thrive naturally. Spring and summer were cooler than normal with only six days during this period over 40 degrees compared to the average of 15 days. Small patches of rain occurred during the ripening and harvesting season which was beneficial in reducing any disease or mould to the grapes. Overall the 2018 vintage in the Riverina produced standout of Sauvignon Blanc showing vibrancy, freshness and crisp, natural acidity.
Vinification/MaturationMany parcels of Sauvignon Blanc were harvested at their optimum maturity level in the cool of the early morning and delivered direct to the winery for immediate processing. At the winery the fruit were gently crushed and pressed to maintain quality. The pristine juice was then allowed to settle and fined to remove any phenolics, then racked and warmed before fermentation in stainless steel tanks. The combination of yeast strains used to perform the alcoholic fermentation was selected especially to produce characters that enhance the natural fruit flavours and contribute elegance to the wine. After fermentation the wine was lees stirred for six to eight weeks to enhance richness across the mid palate and provide weight. The wine was stabilized before filtration and bottling under screw cap.
