Growing ConditionsA mild Spring & early Summer set the vines up well for a good vintage. Rain in the second week of January freshened the vines and provided ideal moisture for the ripening period. This was followed by warm weather which persisted throughout the entire harvested period, resulting in a compressed vintage. There was nil disease pressure due to the great canopies and low yields. All red grapes were of great quality this season with vibrant fruit flavours and supple tannins.
Vinification/MaturationMachine harvested in the cool nights of Hilltops with a small portion of whole bunch fruit to express the lifted aromatics of Hilltops Shiraz. Carefully de-stemmed into open top fermenters, the fruit was cold soaked for 2-3 days before inoculation with selected yeasts. During ferment the wine was pumped over and plunged up to three times daily; and after a period of 7 days was pressed off, allowed to settle then racked to old, new and used French oak puncheons and hogsheads. Larger oak was selected to allow a gentle maturing of the tannins without loss of the characteristic aromatics of the variety and region. Matured in barrel for 10 months with minimal rackings occurring during this period.
