PalateMedium bodied with bright acidity and fine slatey tannins. Perfumed floral red fruits with charcurterie (preserved cooked meat flavours) and toasty oak continue on the palate.
Growing Conditions2015 was almost a perfect growing season in the Canberra District, with a mild spring and summer and no extreme heat which allowed a long and even ripening period for fantastic flavour development. Shiraz from well-managed vineyards escaped any damage or disease and remained clean throughout ripening and was picked at optimum ripeness.
Vinification/MaturationHand picked in the cool of the morning. Fermented in open top stainless steel with up to 50% whole clusters included. Cold soaked for 5 days prior to allowing the tank to gently warm up, then inoculated with yeast. Hand plunged only for a total time on skins of 2 weeks. Gently pressed then racked to barrel for maturation for 10 months on fine less with no rackings. Old used was 35% new French oak puncheons, with the balance one to four year old puncheons and hogsheads. Carefully blended in January 2016 then lightly fined prior to bottling.

Hand-picked, 5 days cold soak, open-fermented, up to 50% whole bunches, 14 days on skins, matured for 9 months in French puncheons (35% new). Fragrance and elegance personified. Juicy cherry fruit opens proceedings, then mouthwatering acidity and fine-grained tannins draw out the lingering finish. Amen.
