AromaIntense citrus characters of lime and lemon, coupled with notes of orange blossom and green apple.
PalateAn intensely flavoured palate with dominant citrus characters. Beautiful acid provides natural drive, with wonderful fruit weight and balance.
Growing ConditionsA beautiful growing season, with warm days and cool nights promoting lovely clan bunches and healthy canopies. Dry conditions caused the grapes to ripen slightly earlier than normal, with some mild rain events leading up to picking delaying the harvest.
Vinification/MaturationHand picked and whole bunch pressed, the pressings were discarded and the free run collected and cold settled for 48 hours. The juice was then racked clean for a cool ferment of 16 days where the wine was then chilled and left to settle over the next two months. Stabilisation and clarification took place before bottling.

Last Horizon is the result of Adrian Sparks’ passion for discovering the greatest vineyard sites in Tasmania. Comprising of small parcels or single vineyard wines, they are rich and fruit expressive, reflecting the character of the region’s unique micro climate.
