Vinification/MaturationBunches of white grapes are harvested very early to ensure crisp acidity. The goal is to get a base wine as fresh and fruity as possible with a very good acidity. This Blanc de Blancs is made from fruit sourced across Southern France, and produced Charmat Methode, with the secondary fermentation carried out in tank.

An amazing sparkling wine from Southern France. Chant du Midi translates as ‘The Song of the South of France’ and presents single regional wines from the Mediterranean area of Southern France. Fine and delicate in style, with aromas of citrus and honeysuckle. The palate is dry with a stone fruit centre, and a talcy mineral finish. Amazing value for a touch of the French exotica.
