PalateSoft and generous with both red berry spectrum and brooding dark fruit flavours, silky tannins and well balanced oak provides a lingering finish.
Growing ConditionsAverage Spring temperatures coupled with average rainfall led into a cooler than average summer, this caused a delay in harvest for around 2 weeks. However, fruit quality was not affected and fruit was harvested at its optimum maturity level.
Vinification/MaturationPicked in the cool of the morning, the selected Cabernet and Merlot parcels were delivered to the winery as soon as possible and crushed in stainless steel fermenters. Using selected yeasts, the must was pumped over six times daily to maximise colour extraction and natural tannin development. After seven days on skins, the wine was pressed off into 20% new and 80% old French oak barrels and allowed to mature for a minimum of 8 months. Once maturation was complete, selected barrels were then blended together and lightly fined prior to bottling.
