RegionHilltops, NSW
WinemakerAndrew Higgins
ColourBright purple red
AromaBlood plums, red cherries, black spice, cloves and hints of background toasty oak.
PalateAn intense medium bodied palate of violets and blueberries with long soft tannins and a creamy oak spice finish.
Growing ConditionsAn excellent vintage with warm days and cool nights. Spring frosts wiped out blocks on lower sites with poor cold air drainage. This resulted in a lower regional crush but quality was high due to it only being from the most suitable sites. A hot and dry growing season resulted in balanced canopies with low yields and concentrated fruit. Some rainfall occurred during February & March which was a positive as it refreshed the vines and gave them sufficient water to get through to harvest with minimal stress. There was no disease pressure due to the great canopies and low yields.
Vinification/MaturationMachine harvested in the cool nights of Hilltops with a small portion of whole bunch fruit to express the lifted aromatics of Hilltops Shiraz. Carefully de-stemmed into open top fermenters, the fruit was cold soaked for 2-3 days before inoculation with selected yeasts. During fermention, the wine was pumped over and plunged up to three times daily; and after 7 days was pressed off, allowed to settle then racked to old, new and used French oak puncheons and hogsheads. Larger oak was selected to allow a gentle maturing of the tannins without loss of the characteristic aromatics of the variety and region. Matured in barrel for 10 months with minimal rackings during this period.
