PalateFleshy fruit bright wine full of dark chocolate & cassis fruits. Supple tannins, achieved through judicious use of oak maturation & skin maceration, provide flesh & length to rich full flavoured Cabernet Sauvignon.
Growing ConditionsA mild winter with good rains set the vines up well for vintage with balanced yields. Warm temperatures over February and March compressed the harvest period, placing pressure on vineyard and winery staff to harvest grapes at optimal ripeness and in peak condition. There was nil disease pressure due to the great canopies and low yields. All red grapes were of fantastic quality this season with dense, dark colours and flavours and ripe, supple tannins.
Vinification/MaturationSelect blocks were machine harvested in the cool nights prior to being destemmed into open top fermenters. After an average maceration period of 10 days the ferments are pressed, settled and racked to oak for maturation. Oak used was predominantly French hogsheads at 20% new, the balance being 1 to 3 year old barrels. Maturation in barrels was for 15 months with minimal rackings before being carefully blended, lightly fined and filtered before bottling.
