AromaLifted varietal nose of dark chocolate, mulberry & cassis fruits. Subtle background chocolate oak influence adds further complexity.
PalateFleshy fruit bright wine full of dark chocolate & cassis fruits. Supple tannins, achieved through judicious use of oak maturation & skin maceration, provide flesh & length to rich full flavoured Cabernet Sauvignon.
Growing ConditionsAnother testing growing season, following in the footsteps of 2011, with above average rainfall resulting in high disease pressure. Quality of harvested fruit was generally high as well managed vineyards achieved ripe fruit with fresh aromatics and good flavour concentration.
Vinification/MaturationSelect blocks were machine harvested in the cool nights prior to being destemmed into open top fermenters. After an average maceration period of 10 days the ferments are air bag pressed, settled and racked to oak for maturation. Oak used was a combination of French & American hogsheads at 20% new, the balance being 1 to 3 year old barrels. Maturation in barrels was for 15 months with minimal rackings before being carefully blended, lightly fined and filtered before bottling.
