Growing ConditionsAfter below average winter, spring and summer where above average rainfall with cool conditions, in the King Valley. Fortunately February and March dried out and where cool allowing steady ripening with lower disease pressure. Ideal late ripening conditions allowed flavour development and the retention of natural acidity, with well managed vineyards that had managed and avoided disease allowing high quality fruit.
Vinification/MaturationAll fruit was machine harvested at night to retain freshness and flavour. Fruit is chilled and pressed immediately. Juice is cold settled for 3 days until clear before cold fermentation in stainless steel tanks to conserve fruit flavour. A component of wine is barrel fermented for texture and mouthfeel. Wine is matured in stainless steel tanks with light yeast lees to build texture and mouthfeel. The wine is then blended, stabilised followed by gentle filtration before bottling.
