Growing ConditionsVintage 2015 was a fantastically dry and mild growing season in the Yarra Valley. This resulted in fresh canopies, moderate berry size and minimal vine stress allowing the fruit to reach optimal flavour ripeness with great retention of freshness & acidity.
Vinification/MaturationThe grapes for the Tightrope Walker Chardonnay were carefully hand-harvested in the cool of the morning and briskly transported to the winery for overnight chilling in bins. The grapes were then sorted and whole-bunch pressed, with only the finest free-run juice taken, with minimal phenolic pickup and maximum flavour extraction the key to this style of Chardonnay. After a short consolidation in tank, all of the juice was then transferred to French oak barrels for fermentation. After a moderated temperature fermentation which lasted around 12 days using combinations of indigenous and inoculated Chardonnay specific yeast strains, selected to highlight complexity and promote varietal fruit characters, the wines began their weekly battonage (stirring) program, which continued for approximately 3 months. Blending took place in December of the that year, after 8 months maturation in 25% new French barriques and hogsheads before being lightly fined and filtered to bottle.
