|Growing Conditions||During the growing season we were fortunate to have significant rain events at critical times of the growing cycle. Mild temperatures during December contributed to the overall quality of the vintage, particularly the favourable mild conditions of the critical veraison period around Christmas and New Year. The vines held excellent canopy structures during the ripening period leading to the development of full rich flavour profiles and balanced sugar and acid ratios. All varieties ripened to their full potential during an unseasonably dry January. Semillon was harvested in perfect condition, with ferments showing intense varietal characters and flavours; as would be expected from the dry year. 2007 has proved to be an outstanding vintage with stellar wines!|
|Vinification/Maturation||All grapes for this wine were handpicked. At the winery they were de-stemmed, crushed, must chilled and the juice allowed to drain quickly in from the skins. After cold natural settling, the clear juice was racked off, warmed and inoculated with natural, neutral yeast for fermentation. The fermentation was slow and cool to retain the exceptional fruit flavour of the vintage. Three weeks after fermentation the wine was filtering before bottling, ensuring the retention of the very essence of the vineyard and the purity of the varietal character.|

Cellar Aged. Gleaming yellow-gold; eight gold medals between '07 and '13 speak for themselves. It is now near its peak, acidity its best friend, the fruit a mix of lemongrass and dried grass. It will develop even greater depth, so don't look this remarkable gift horse in the mouth right now.
While you wait for your other Hunter Semillons to hit maturity it’s always good to be able to grab a Lizzy. I like this more than the 2006 release. It’s slightly less developed and has more focus and reach. Lanolin, lime marmalade, creamed honey on toast and lemon citrus freshness. A touch of aniseed and spice. No harm whatsoever in putting some away for a few more years if you’d like to.
Hunter Semillon is one of the world’s greatest aging white wines. Elizabeth is always released after some ageing (the 2012 and ’11 vintages are also available), but the proof of the pudding is in the cellar-aged releases, this one seven years old and extraordinary value at $24. With a full buttercup-yellow colour, it has toasty, straw, citrus and resin-like aromas of great complexity and allure. It’s very dry and savoury in the mouth and cries out for food. There’s a parade of lemon-butter, beeswax and toast aromas and flavours, all of which extend to a very long finish and aftertaste. Drink now to 2018. Food: marinated fish; grilled fish; pasta with clams; mussels mariniere.
