|Palate||The wine has lovely tannin structure which is critical to our style and a hallmark of this noble variety ? something that will also put it in good stead for extended cellaring.|
|Growing Conditions||The 2012 vintage in Margaret River is the sixth consecutive outstanding vintage that the region has experienced. The lead up to vintage was dry and warm with only a couple of very warm spells which the vines handled well and are ideal for tannin maturation in our style of Cabernet Sauvignon|
|Vinification/Maturation||Handpicked fruit was gently destemmed with the whole berries then being loaded into a small static fermenter. The must was cold soaked at 8C for 5 days pre-fermentation before being allowed to naturally warm up slowly with a wild fermentation start before being seeded with a neutral pure yeast strain. A strong, healthy fermentation followed. The fermentation lasted 10 days with the wine left on skins for an additional 12 days to achieve the desired structure and style. At pressing, it was decided that 100% of the pressings fraction was to be returned into the free-run to give body and balance. The wine then underwent malo-lactic fermentation in barrel and maturation for 17 months ? 100% very fine grained French oak hogsheads (300L). A light fining with fresh, local free-range egg whites was undertaken just prior to bottling followed by extended maturation in bottle prior to release in September 2015.|

Highly cellarworthy. Strong fruit and strong tannin. Cassis, gum leaf, smoky oak and gravel. Establishes its credential then settles in for the long, slow haul. It's in dock for now, its tannin coiled, its fruit stacked and stored. It will be many years before we see its best.
Evans & Tate cabernet sauvignon 2012 ($100) Superbly crafted wine based on some exceptional fruit from a very good vintage. Typically elegant and stylish, with subtle oak and fruit integration. The tannins are quite chalky and the oak liberal but not overplayed. Tightly held but that fruit sweetness is clearly evident within. (Best drinking: Now to 2030. Alc: 14%)
The colour is astonishing, still bright crimson; the bouquet and palate are full of juicy cassis fruit, yet the overall extract - especially the gossamer tannins - is delicate. A truly beautiful medium-bodied cabernet of exceptional purity and length. Trophies include Best Red Wine Margaret River Wine Show '15, and Best Cabernet Sauvignon Sydney Wine Show '16.
