|Growing Conditions||A very distinct vintage - the dry, warm Spring and Summer meant it was tracking early but a tropical rain event on 19-January saw 50-70mm fall across the region which pushed back harvest dates slightly – the reds (especially Cabernet and Merlot) very much appreciated this rainfall and although we thought the whites may suffer berry split and subsequent high disease pressure, the hard work from our Vineyard Managers coupled with the warm, dry conditions and fresh daily sea breezes resulted in no issues – another “lucky” vintage in Margaret River!|
Out of our main white varieties, Sauvignon Blanc stands out – with great aromatics, perfume and length of flavour. Chardonnay though, is yet again the pick of the white varieties, with extraordinary flavour depth and length at some of the lowest Baume levels seen – we have picked a number of parcels at 11.6-12.0 Baume but tasting like they have been picked much riper and richer.
Just following Easter, late March (29th) saw the tail end of a weak tropical system move through which saw approx. 12mm of rain as it moved through to the South-East. Most reds were picked by this date with the rain being a great little freshener for the older Cabernet vines in Wilyabrup that still had fruit on them.
Overall, the reds and especially Cabernet, look exceptional with higher yields than in 2015 meaning better vine balance and rate of ripening, smaller bunches and some of the smallest berry size I have seen for many years. Great thick skins and flavour concentration also – it may be a Cabernet vintage that will last for many years in the Cellar.
|Vinification/Maturation||Fruit from our vineyards in the northern and north-eastern parts of the Margaret River wine growing region grow the fruit to make our Classic Shiraz with the resulting wine showing ripe, pure Shiraz flavours from these vineyards which are ideally suited to growing the Shiraz variety. |
During the ripening months of March and April, the fruit from each vineyard block was tasted every 3 days to monitor flavour development to ensure each parcel of fruit was picked at its optimum. Each parcel was picked separately during the coolest part of the night to ensure the fruit reached the winery at the coolest temperature possible. Following harvest, the fruit was de-stemmed only (no crushing) and cold soaked in the fermenter for 3-5 days at 5°C prior to commencement of ferment. This cold soaking helps produce a fruit driven, aromatic wine with a lush, soft texture. Following the period of cold soaking, the must was allowed to warm before being inoculated with a yeast strain selected to enhance the spicy varietal characters of Shiraz. The ferment was conducted at 22-26°C to further encourage aromatic retention and to maximise colour intensity by controlling the rate of fermentation. During fermentation, each batch was thoroughly aerated with the grape seeds being removed from the ferment. This process helped produced a fine, softly textured wine style.
Once each ferment reached 0-2 Baume, it was pressed off skins to separate tanks to complete fermentation. The pressings were returned into the free-run to provide structure and body to the end wine. Once dry, a select batch of wine that represented ~30% of the final blend, was racked separately off lees to 100% old (2-5yr) French oak barriques and hogsheads to mature for 9 months. Following blending, the wine was lightly fined using fresh, local free-range egg whites and filtered once prior to bottling.
