|Aroma||The essence of Margaret River SSB, Semillon characters of herbs, lemon grass, melon and nectarine along with a twist of lanolin drive the blend with Sauvignon layers of lime zest, cut grass and passionfruit pulp adding a lovely lift.|

|Growing Conditions||A very distinct vintage - the dry, warm Spring and Summer meant it was tracking early but a tropical rain event on 19-January saw 50-70mm fall across the region which pushed back harvest dates slightly – the reds (especially Cabernet and Merlot) very much appreciated this rainfall and although we thought the whites may suffer berry split and subsequent high disease pressure, the hard work from our Vineyard Managers coupled with the warm, dry conditions and fresh daily sea breezes resulted in no issues – another “lucky” vintage in Margaret River!|
Out of our main white varieties, Sauvignon Blanc stands out – with great aromatics, perfume and length of flavour. Chardonnay though, is yet again the pick of the white varieties, with extraordinary flavour depth and length at some of the lowest Baume levels seen – we have picked a number of parcels at 11.6-12.0 Baume but tasting like they have been picked much riper and richer.
Just following Easter, late March (29th) saw the tail end of a weak tropical system move through which saw approx. 12mm of rain as it moved through to the South-East. Most reds were picked by this date with the rain being a great little freshener for the older Cabernet vines in Wilyabrup that still had fruit on them.
Overall, the reds and especially Cabernet, look exceptional with higher yields than in 2015 meaning better vine balance and rate of ripening, smaller bunches and some of the smallest berry size I have seen for many years. Great thick skins and flavour concentration also – it may be a Cabernet vintage that will last for many years in the Cellar.
|Vinification/Maturation||Our 2016 Classic Semillon Sauvignon Blanc is the 30th vintage of this renowned wine first made by Evans & Tate in 1987. The fruit is sourced from vineyards throughout the entire Margaret River winegrowing region making it a unique wine that truly captures this distinct style and the vintage conditions of the region. Our vineyards in the more northern part of the region produce Semillon with nectarine and lemon flavours whilst Semillon from our more southern vineyards in Margaret River contribute grassy, herbal notes and impart a fantastic fleshiness to the palate.|
Sauvignon Blanc provides additional flavour intensity with tropical fruit flavours coming from fruit sourced from vineyards in the northern part of Margaret River whereas our cooler vineyard sites in the south of the region produce Sauvignon Blanc with fresh grassy notes distinct to Margaret River.
During ripening in the months of February and March, flavour development was closely monitored by taste in each vineyard with the fruit being picked when ideal ripeness was achieved. The fruit was quickly harvested in the coolest part of the night to capture the freshness in all varieties. The cool grapes were then quickly delivered to the winery before being softly pressed with only the highest quality juice being used to make this wine. The juice was settled for 2-3 days at 10C before the clear juice was racked off the grape solids and warmed ready for inoculation with yeast strains that were chosen on their ability to conduct a healthy, even rate of fermentation and to maximise fruit expression in each variety.
A strong, cool fermentation followed and when dry, most batches were clarified to remove the yeast lees before being chilled and stabilised and filtered only once prior to an early bottling.
