|Colour||Very pale and brilliant with a bright green tint, typical of young Sauvignon Blanc.|
|Aroma||Bright, lifted Sauvignon characters from a very good Margaret River vintage for this variety. Fig, passionfruit, cut grass and a touch of wild herbs.|
|Palate||The aromas of this wine come across to the palate, to give you a wine that is vibrant, refreshing and long.|
|Growing Conditions||A very distinct vintage - the dry, warm Spring and Summer meant it was tracking early but a tropical rain event on 19-January saw 50-70mm fall across the region which pushed back harvest dates slightly – the reds (especially Cabernet and Merlot) very much appreciated this rainfall and although we thought the whites may suffer berry split and subsequent high disease pressure, the hard work from our Vineyard Managers coupled with the warm, dry conditions and fresh daily sea breezes resulted in no issues – another “lucky” vintage in Margaret River!|
Out of our main white varieties, Sauvignon Blanc stands out – with great aromatics, perfume and length of flavour. Chardonnay though, is yet again the pick of the white varieties, with extraordinary flavour depth and length at some of the lowest Baume levels seen – we have picked a number of parcels at 11.6-12.0 Baume but tasting like they have been picked much riper and richer.
Just following Easter, late March (29th) saw the tail end of a weak tropical system move through which saw approx. 12mm of rain as it moved through to the South-East. Most reds were picked by this date with the rain being a great little freshener for the older Cabernet vines in Wilyabrup that still had fruit on them.
Overall, the reds and especially Cabernet, look exceptional with higher yields than in 2015 meaning better vine balance and rate of ripening, smaller bunches and some of the smallest berry size I have seen for many years. Great thick skins and flavour concentration also – it may be a Cabernet vintage that will last for many years in the Cellar.
|Vinification/Maturation||The fruit for this wine is sourced all over the Margaret River region to capture the array of distinct Sauvignon Blanc characters in the end wine. The grapes were harvested in the middle of the night, lightly pressed then fermented in cool temperatures to encourage aroma production, texture and overall varietal character. On the completion of fermentation, the batches were chilled, blended and lightly fined before being stabilised and filtered only once to produce a bottle ready wine. This minimal handling had helped retain the attractive primary fruit flavours and aromas.|
