AromaSpicy blackberry fruits combine with complex notes of charcuterie, fresh biscuit oak & tarry ripe fruits.
PalateA well-balanced medium bodied Shiraz with great purity of supple red fruits supported by fine skeletal graphite Heathcote tannins. It is still a little young at this stage but will require further cellar over the next 2-3 years to reach its full potential.
Growing ConditionsA selection of two blocks parcels from Colbinabbin Estate in Northern Heathcote. Both blocks lay on classic Heathcote Cambrian red soils with varying rock levels of greenstone, buckshot & quartz. These ancient soils combine with the warm climate to deliver Shiraz wines of great concentration, red fruit brightness, with supple, yet fine granite like tannins. 2012 saw excellent spring rains and a generally mild summer. The combination of low crop levels and mild conditions during the ripening period together with cool nights and good canopy size were all conducive to excellent flavour development and the retention of natural acidity in the fruit.
Vinification/MaturationUpon reception at the winery the fruit was carefully destemmed into open top fermenters, with up to 10% whole buch inclusion, where they underwent a 4 day cold maceration prior to fermentation. A minimum period of 12 days skin contact per parcel with maceration by plunging only the pressed off into barrel for 16 months. All batches were matured separately in French oak barrels for 16 months with a maximum new oak percentage of 25%. Following this the blend was carefully assembled and gently fined in preparation for bottling. Through utilising great fruit picked at optimum ripeness for the desired style, precision winemaking and minimal intervention during maturation we have achieved a wine of great purity that sings of its origins and delivers very pleasurable drink.
